Vincent Girardin

Vincent Girardin has been committed to Biodynamic Agriculture since 2009 and they should get their final and official certification by the end of 2011.

 
Their vines are handled as follows:
 
- No herbicide or insecticide,
- Deep plowing,
- Compost with manure from a District bio farm,
- High trellising on wires for a better photosynthesis and consequently a better sugar transfer to the grapes,
- Wine-harvest by hand, the grapes are sorted twice  (once when picking the grapes and again on the sorting table).
 
Winemaking:
 
- They use the most modern winemaking equipment. During the winemaking period, they try to be as careful as they can with the grapes in order to have the best possible terroir extraction,
- The alcoholic fermentation is slow with natural yeasts, which are on the grape berries,
- The ageing is long, on fine lees in French oak. They follow the lunar calendar for the bottling.
 
The white wines find their essence in their finesse, an extreme aromatic purity, at a focal point between acidity and richness.
